Crunchy Salad
Fruit and vegetables are rich in vitamins and minerals. They keep you healthy. Remember to eat a variety of brightly colored fruit and vegetables every day.
Ingredients
* 6 lettuce leaves - shredded
* 2 baby carrots
* 4 cherry tomatoes
* 2 pieces of dried apricot
* 20g walnuts (toasted) - exclude walnuts if you are allergic to nuts and may replaced with sunflower seeds
* ½ cup of low-fat plain yoghurt
Method
Combine all the ingredients and chill for 1/2 hour before serving.
