Crisp Cucumber Salad
Ingredients
* 2 medium Japanese cucumbers (1 pound), peeled, seeded and thinly sliced (about 3 cups)
* 1 large green onion, thinly sliced
* 2 tsp fresh lemon juice
* 2 tsp sesame oil
* 1 tsp soy sauce
* 1 pinch ground red pepper
* 1 tsp sesame seed (toasted)
Method
Place cucumbers and green onion in serving bowl, set aside. For dressing, combine lemon juice, sesame oil, soy sauce and ground red peper in medium bowl. Stir dressing into cucumber and onion until well-coated. Sprinkle with toasted sesame seeds. Serve immediately.
Makes 6 side-dish serving.
Note: to toast sesame seeds, sprinkle them evenly in the bottom of a shallow baking pan. Bake in a 350 degree F oven for 5 to 10 mins or until lightly golden, stirring twice.
