Tropical Fruit Salad with marinated Sago Pearls
Ingredients
* 1 small red papaya
* 4 ripe yellow mangoes
* ½ cup sago pearls
* 200g palm sugar (gula melaka), grated or chopped
* 2 tbs rum
Method
Soak the sago pearls for 5 mins, drain and bring to boil in a small pot of water, stirring all the time until the pearls turn translucent for about 10 mins.
Drain and rinse pearls under cold running water. Strain and leave aside.
Place chopped gula melaka in a pot, add ½ cup of water and bring to boil. Stir to dissolve the sugar and then add rum and bring to a boil.
Place strained sago pearls in the rum syrup and leave to marinate in the fridge until ready to serve (this can be done ahead of time).
Peel papaya and mangoes, cut papaya into half and using a spoon, remove the black seeds within and cut away the white pitch.
Remove seed from mangoes.
Cut papaya and mangoes into large cubes. Place equal amounts of both fruits into bowls and top with marinated sago pearls.
Served 4 people.
