Red Date with Walnut Puree

Ingredients
* 150g walnut, skinned
* 30g rice
* 4 cups water
* ½ cup sugar
* ½ cup fresh milk
* 8-10 red dates, stoned

Method
Rinse red dates, steam for 10 mins, then mash.

Place walnut on a baking tray, brown in medium hot oven, turning occasionally.

Rinse rice and soak for awhile.

Place walnut, rice and 1½ cup water in a blender and blend until fine and smooth, strain through a sieve.

Add the rest of the water and stir well.

Bring walnut mixture, red dates and sugar to the boil, stirring all the time. Lastly, stir in fresh milk, reheat and serve.

Served 4 people.
