Sweet Eight Treasure Tea
Ingredients
* 8 red dates
* 2 tbsp sultana
* 2 tbsp dried longan
* 1 tbsp medlar seed (gouzizhi)
* ¼ cup fresh lotus seed
* 10g dried chrysanthemum
* 2 tbsp slice American ginseng
* ¼ tbsp green tea leaves
* 8 cups of water
* ½ cup crushed/cube rock sugar
Method
Rinse and remove stones from red dates, rinse sultana, dried longan and lotus seed.
Rinse medlar seeds and soaked for 5 mins, drain.
Place the soaked ingredients together with 8 cups of water in a pot and bring to boil, lower heat and simmer for ½ hour.
Add dried chrysanthemum, American ginseng and tea leaves, stir in enough rock sugar to taste.
Cover, remove from heat and leave to infuse for 10 mins before serving.
Served 4 people.
