Sweet and Sour Fish Head

Ingredient
* 1 fish head (800g to 1kg)
* 1 tsp light soya sauce
* 1 tsp sesame oil
* 0.5 cup of cornflour
* 2 cups oil
* 2 cloves garlic (chopped)
* 1 red onion (peeled and sliced)
* 4 tbsp tomato ketchup
* 0.5 tsp sugar
* 1 red chilli (sliced)
* 1 tomato (cut into 6 wedges)
* 0.5 cup geen peas

Method
Wash the fish head, chop into finger length pieces, wash and pat dry. Mix with light soya sauce and sesame oil and marinate for 10 mins.

Mix the fish with corn flour.

Heat the oil in a wok over high heat till the oil is very hot and add the fish and deep fry till the fish is crispy and set aside.

Heat the wok again and add 2 tbsp of used oil, add the garlic and onions and stif fry for 2 mins before adding the tomato ketchup, sugar, red chillis, tomato wedges, green peas and some corn flour mixture.

Stir fry till the sauce becomes thick.

Arrange the fish head pieces on a serving plate and then pour the sauce over and serve.
